Feta Ziti

1 cup Chicken Broth
2 t. Oregano
1 lb. Chicken breasts, cut into 1 in. cubes
1/2 lb. Whole Wheat Ziti
1 tub (about 4oz.) Feta Cheese, crumbled
1 T. Lemon Juice
1 t. Salt
1/2 t. Pepper
1 T fresh Parsley (dried works as well)
1 1/2 cups of cherry Tomatoes, cut in half

1.  In a large frying pan, simmer the chicken broth and the oregano until 1/2 cup of liquid remains in the pan, about 4 minutes.  Stir in the chicken cubes, cover the pan, and put on low.  Let the chicken simmer on low until just done, about 15 minutes. 

2.  Boil the Ziti until al dente.  Drain.

3.  Add the remaining ingredients in with the chicken, adding the ziti last to melt the cheese.  Serve with nice, crunchy bread.
