Apricot Honey Chicken
Weight Watchers: 5 Points
4 boneless skinless chicken breast halves (5 oz each)
1 tablespoon canola oil
3 tablespoons apricot preserves
2 tablespoons orange juice
4 teaspoons honey
Preheat a large skillet with the canola oil and fry the chicken until done.
Mix the apricot preserves, orange juice and honey and pour over chicken for 2 minutes.
Serves 4
Note: Don't be afraid to make extra sauce and pour it over the chicken. It's pretty good.
