Egg Potato Sausage Mix
 
Ingredients (adjust to desired amounts)
  • 2 Medium Potatoes, Finely Chopped (frozen hash browns work well also)
  • 6 Eggs
  • 1 to 2 handful of your favorite cheese
  • 1/2lb Sausage (bacon & ham work well also)
  • Salt & Pepper
  • EVOO
Chop the potatoes into small pieces, kind of like hash browns, so they cook fast.
 
Heat a heavy skillet to high heat.  Spray with non-stick coating and fry sausage until down, but not over-cooked.  Drain most, but all, of the grease.  Add a small amount of evoo and dump in potatoes and fry until brown.  Mix in sausage.
 
Break eggs into a bowl and mix well.  You can add a little milk for softer eggs but I don't.
 
Move potato/sausage mix to the side in the skillet and pour in eggs and cook.  I find it good to lower the temp when cooking the eggs.  Right before the eggs are done mix eggs, potatoes & sausage.  Turn off fire and add lots of grated cheese and mix.  The cheese should melt even though the fire is off.
 
Serve with toast or biscuits.
