Pancake & Waffle Fruit Syrup/Topping
 
Love Fruit on/in your Pancakes & Waffles?
 
I find I prefer putting my fruit on top my pancakes and waffles rather than in them and if you use the amount of topping I like to use, you never know the difference.  Here is a great way to quickly convert your berries into a great topping.
 
1 1/2 cups water
 
1 cup sugar (this will vary depending on the fruit and your preference.  1 cup is a good place to start)
 
3 cups berries (use just about anything and like I did today, mix and match.  I used blueberries and strawberries.  Fresh or frozen, it doesn't matter.)
 
1/4 pack of Sure-Jell (or some other thickening agent)
 
Mix the water and sugar and and cook in a sauce pan until the sugar has dissolved.
 
Add the berries and let them bubble for 30 minutes or more.  The berries will begin to breakdown.
 
Stir in the thickening agent slowly and let simmer for a couple of minutes.  Remember, it will be much thicker when it cools so make sure it doesn't  over thicken at this point.
 
Remove from heat and let cool. 
 
Serving Note: I prefer serving this warm so I normally make it an hour before I will use it so it's still plenty warm when I use it.
