Peanut butter and banana bread bread with chocolate & white chips.
We baked this recipe into 3 small loaves.
INGREDIENTS
1 1/4 cups all purpose flour
1/4 cup granulated sugar
1/4 cup packed brown sugar
1/2 tablespoon baking powder
1/4 teaspoon salt
1/4 teaspoon ground cinnamon
2 ripe large banana, mashed (1 cup)
1/2 cup milk
1/2 teaspoon vanilla
1/2 cup chunky peanut butter
1 1/2 Tablespoons vegetable oil
1/2 egg, slightly beaten
1/2 cup mini chocolate chips (we added 1/4 cup white chips also)
DIRECTIONS
1. Preheat oven to 350F.
2. Spray the 9×5 inch loaf pan or 3 small loaf pans with flour-added cooking spray. Otherwise you can also choose to grease the pan.
3. Mix wet ingredients together ... flour, sugars, baking powder, salt and cinnamon together in a large mixing bowl.
4. In another bowl, mix dry ingrediants ... mashed bananas, milk, peanut butter, oil, vanilla and egg.
5. Add banana mixture to the flour mixture and stir it until it is just combined.
6. Finally, add in the chocolate chips.
7. Pour batter into the loaf pan and bake it for 50 to 55 minutes (30 to 35 minutes in small loaf pans). Use a toothpick or cake tester and insert in the middle. If it comes out clean your banana bread is ready.
8. Allow the loaf to cool, if you can, in the loaf pan for 10 minutes before removing from the pan and allowing to cool fully on a wire rack.
9. Wrap and store overnight before serving to your family and friends.
